Chicken Caesar Salad



Introduction:

A Caesar salad makes a perfect recipe for a light dinner or a healthy lunch, it has all the nutrients required by one throughout the day. This super easy recipe can be made on the go any time and works well as a side dish.

The juicy lemon chicken accompanied by the crunchy lettuce and croutons, and the sliced cherry tomatoes and pasta bringing a different twist to the salad all combined together perfectly by the creamy dressing.


Serves- 4

Time to make- 30 minutes

Cooking time- 10 minutes


Ingredients:

• 1 Lettuce


• 6 Cherry tomatoes (sliced)


⅓ cup Pasta/Macaroni (cooked)


• Croutons-

1. 3 slices of bread

2. Salt (according to taste)

3. Pepper (according to taste)

4. Garlic powder (according to taste)

5. Olive oil


• Dressing

1. ⅓ cup olive oil

2. ½ tbsp lemon juice

3. 1 tsp dijon mustard

4. 1 tbsp worcestershire sauce

5. ¼ cup cheese (grated)

6. 1 clove garlic (crushed)

7. Kosher salt (according to taste)

8. Pepper (according to taste)

9. 1 tbsp caesar dressing

10. 4 crushed croutons


• Chicken-

1. 2 chicken breasts

2. Salt (according to taste)

3. Pepper (according to taste)

4. 2 tsp Lemon juice

5. Olive oil (from the dressing)



Method:

• Croutons-

1. Preheat the oven to 180°C for 15 minutes.

2. Cut the bread slices into small cubes.

3. Add them to a bowl and sprinkle the salt, pepper, garlic powder and drizzle a little bit of olive oil.

4. Now, take a baking tray and brush it with olive oil and add the croutons to the the tray, Spread them all over the tray.

5. Keep it in the oven on 180°C for 15-20 minutes until golden and crisp.


• Dressing-

1. In a cup add- olive oil, lemon juice, dijon mustard, worcestershire sauce, grated cheese, garlic, caesar salt and pepper.

2. Mix all the ingredients together until it thickens.

3. Add in the crushed croutons.


• Chicken-

1. Make cuts in the chicken for it to get marinated thoroughly.

2. Sprinkle the salt and pepper and drizzle the lemon juice.

3. Drizzle the oil from the dressing for it to absorb the flavor. And let it marinate for 30 minutes.

4. Drizzle some olive oil to a grilling pan and add the marinated chicken.

5. Cook till the chicken looks golden.

6. Let it cool and cut into small cubes.


• Assembling-

1. Take a large bowl and add the lettuce, sliced cherry tomatoes, boiled pasta and the cubed chicken together.

2. Add in the dressing to the bowl and mix well.

3. Add the croutons and the grated cheese to the bowl.

4. Now, pour in the remaining dressing to the bowl and Enjoy!
