Baked Vegetable Cup

Introduction:

These small cups will leave you wanting more. A healthy and yummy snack that you can at any time of the day


Ingredients:

1 Cup Corn

1 Cup Colored Bell Peppers (Finely Chopped)

2-3 Tortilla Wraps

1 cup Grated Cheese

Caesar Dressing/Sour Cream

Salt*

Black Pepper

Lemon

1 Cup Kidney Beans

1 tspn Paprika

Oregano

Garlic Powder *

Cumin Powder*

Chili Powder*

*Add according to taste


Method:

Pre heat your oven at 180°C for 10-15 minutes.

Boil the corn and beans until well cooked.

Mix together corn and the finely chopped bell peppers

Add the salt, pepper, lemon juice ,garlic powder, cumin powder, chili powder and paprika.

Brush the muffin tray with melted butter.

Gently fold the tortillas in half and then in quarters.

Place one in each cup of the tray by folding it in such a way that it forms a cup.

Once placed in the muffin tray brush melted butter inside the tortillas.

In each of the cup add one table spoon of baked beans, cover it up with an entire layer of grated cheese and then add in the corn and the bell pepper on the top.

Bake for 8 to 10 mins at 180°C until golden brown.

Top with sour cream/Caesar dressing or some grated cheese as desired.

Sprinkle some oregano and enjoy!
