Vodka Pasta

Introduction:

This is a very simple creamy saucy red sauce pasta made with just a few basic ingredients that everyone can find in their Kitchen.


Ingredients:

500gm Pasta

¼ cup Olive oil

2 tspn Red Chili Flakes

Garlic Cloves (chopped)

¼ cup Vodka

½ cup Tomato Puree

1 tomato chopped

1 cup heavy cream

2 tspn Salt

1 tspn Pepper

2 tspn Oregano

1 cup Cheese


Method:

In a large bowl of salted water and olive oil add the pasta, cook for 15 minutes.

Meanwhile In a pan, heat the olive oil on medium heat. Add the chili flakes and garlic and cook,stirring, until soft and lightly browned.

After removing the pan from the heat add the vodka to the pan. To add a flambè, carefully add light to the pan with a long reach lighter and the light will go out in 30-45 seconds.

Add in the puree as well as the chopped tomatoes, stirring, until reduced.

Once cooked, remove from the heat and let it cool.

Once cooled, using a blender or food processor, blend the sauce unitl smooth, then pour back into the pan.

Add in the cheese and season with salt, pepper and oregano.

Drain the pasta, and transfer to the pan with the sauce.

Toss the pasta until evenly coated with the sauce.

Serve with grated grated cheese and oregano and enjoy!


Tip:

You can also bake the pasta to melt the grated cheese on top at 180°C for 5-7 minutes, until the cheese turns golden brown.
