Introduction:
Falafel and Hummus is a traditional Middle Eastern food, it is a very famous street food in various countries and is a beautiful combination of the cold served hummus and the hot and crispy falafel patties. The key ingredient being chickpeas is used in a different way by adding a distinct flavor and texture to both the dishes.
Ingredients:
Hummus-
2 cup chickpeas (soaked, boiled and skin removed)
½ cup sesame seeds
1½ cup olive oil
4 garlic pods
3 tbsp lemon juice
Salt to taste
*You can also add ½ cup of water from the boiled chickpeas to the hummus to make it more smooth.*
Falafel-
1 cup chickpeas (soaked)
½ cup parsley (finely chopped)
¼ cup coriander (finely chopped)
1 large onion (finely chopped)
4 large garlic pods
1 tbsp cumin powder
½ tsp baking soda
Salt to taste
Oil for deep frying
Garnishing-
2 tbsp extra virgin olive oil
Paprika
Method:
• Hummus-
1. Blend together- chickpeas, sesame seeds, olive oil, garilc pods and the lemon juice.
2. Blend together all the ingredients in two portions.
3. Once the mixture is smooth and fluffy let it chill for atleast one hour.
• Falafel-
1. Blend together- chickpeas, parsley, coriander, onion, garlic pods, cumin powder, baking soda and salt.
2. Once all the ingredients are blended well and combined together, shape the mixture into small circular patties.
3. Heat the oil and deep fry the patties.
• Garnishing-
1. Pour the extra virgin olive oil and sprinkle some paprika on the cold hummus before serving.
2. Serve with some freshly cut cucumbers seasoned with some black pepper and lemon juice and enjoy!
