Vegan Mac & Cheese



• Introduction:

A healthier take on the classic (and comforting) kid-approved dish. This recipe is also really easy to dress up, so feel free to add fresh herbs and veggies you have on hand to make this recipe extra nutritious and special. The vegan cheese sauce is a cashew base, so expect to get fuller faster. The nutritional yeast makes up the perfect substitute for cheese and we're sure you won't even notice a difference.


• Ingredients:

1. 1¾ cup whole wheat pasta(boiled)

2. ¾ cup cashews (soaked overnight)

3. 4 tbsp Nutritional yeast

4. 1½ tsp sea salt (according to taste)

5. 1 tsp black pepper (according to taste)

6. 1 tsp onion powder

7. 1 teaspoon garlic powder

8. ⅓ cup olive oil

9. ¼ cup rice flour

10. 2¾ cups unsweetened almond milk

11. 1 tsp red chili flakes

12. 1 tsp oregano


• Method:

1. In a bowl mix together- Nutritional yeast, onion powder, garlic powder and ¾ cup milk.

2. Drain the soaked cashews and blend them with the nutritional yeast mixture, until it forms a thick paste.

3. Now, take a saucepan and drizzle the olive oil and whisk in the rice flour and continue whisking constantly for 3-5 minutes or until the flour smells toasty but hasn't browned.

4. Whisk in the almond milk, stirring constantly add in the cashew and nutritional yeast paste.

5. Keep on constantly stirring and immediately pour in another cup of milk.

6. As soon as you see the mixture thickening again add in the whole wheat pasta and mix well.

7. Add in the remaining cup of milk and sprinkle over the sea salt, pepper, oregano and red chili flakes.

Serve hot and enjoy!
