Introduction: This is a traditional spicy dish from the Southern US, it is mainly known for it spicy sauce 'Cajun'. This is a very easy recipe and can be made from some basic ingredients. Duration: Prep time- 10 minutes Cook time- 25 minutes Ingredients: 5 Baby Potatoes 2 tbsp All Purpose Flour 4 tbsp Cornstarch Water- As Needed 2 tbsp Coriander(For Garnishing) For Sauce- 1¼ Cup Mayonnaise Milk ⅓ Cup(cold) 2 tsp Paprika Powder 1 tbsp Peri Peri Powder 1½ tsp Onion Powder 2¼ tsp Salt 1½ tsp Pepper ½ tsp Red Chili Powder ¼ tsp All Spices(optional) 2 tsp Garlic Powder (According to taste) Method: Boil the potatoes in a pressure cooker for two whistles. Once boiled, let them cool completely.
Without removing the skin of the potatoes, Gently smash each potato with your palm.
Prepare a slimy mixture of- Cornstarch, Flour and Water.
Coat the potatoes in the cornstarch mixture and shallow fry in hot oil.
Remove from the oil once golden brown and set aside to cool.
Now in a large bowl add- mayonnaise, paprika, peri peri, onion, salt, pepper, red chili, all spices and garlic powder.
Mix all the ingredients well and slowly add the milk in two halves.
Pour this sauce over the potatoes.
Serve Hot and Enjoy!
Tip:
Double frying the potatoes will make them crisper.
Add Chaat Masala on the potatoes before pouring the sauce to give it an Indian touch.
