Introduction:
A unique mix of flavors- Lemon chicken, seasoned with different spices Served with mashed potatoes and crunchy sauteed vegetables.
Ingredients:
Mashed Potatoes-
2 boiled potatoes
½ cup grated cheese
¼ cup butter(melted)
3-4 tbsp of Milk
Sautéed Vegetables-
Bell peppers(cut in cubes)
French beans(cut in halves)
1 Garlic clove(finely chopped)
1 carrot(chopped in circles)
Cold cuts(optional)
Lemon Chicken-
salt
1 chicken breasts
1 tbsp lemon(juice)
Black pepper
Chili Flakes
Oregano
2 tspn Peri peri powder
2 tspn mixed spices
½ tspn chili powder
Method:
Mashed Potatoes:
Boil the potatoes until soft. Once boiled, dry off the excess water.
Mash the potatoes until it forms a smooth texture.
Pour in the melted butter, milk and cheese in two portions so that the mixture doesn't become lumpy.
Whisk until fluffy and light.
And lastly add the salt and pepper according to taste.
For the sautéed vegetables:
On a heated pan add some oilve oil.
To the hot oil add some salt, pepper, oregano and chili flakes according to taste.
To the pan add some garlic and let it get toasted until golden brown.
Lastly, to the roasted garlic add the remaining bell peppers, carrots and beans.
Stir the vegetables occasionally until Lightly brown.
Lemon Chicken:
In a bowl add- salt, pepper, oregano, chili flakes, paprika, chili powder, peri peri and mixed spices and mix well.
To the dry ingredients add the freshly squeezed lemon juice and a few tbsp of oil and the chicken breast well.
Marinate it for 1-2 hours.
*Add a few cuts in the chicken so that the chicken can get marinated properly.
Once marinated, add oil to a pan and let it heat, add the chicken to the pan one by one.
Remove from the heat as soon as it starts to stick to the bottom of the pan.
Serve them all together with some cold cuts on the side and Enjoy!
