• Introduction:
A stunning Italian dish and a few incredible ingredients, this delicious Shrimp Scampi can be cooked easily on a busy evening and has the perfect and twist is added by the flavorful and spicy caper seeds. We're also keeping this recipe kid friendly by not adding White wine but we're using the full of nutrition vegetable stock.
• Ingredients:
1. 6 peeled, deveined shrimp
2. 3 oz dry capellini pasta (boiled)
3. 2 tbsp olive oil
4. 2 garlic bulbs
5. 1 Onion (small diced)
6. 2 tsp chili flakes
7. 1 tsp lemon zest
8. 2 tbsp lemon juice
9. 1 tbsp capers
10. ⅓ cup cherry tomatoes
11. ½ cup vegetable/chicken/seafood stock
12. 1 oz butter
13. ½ cup Parmesan cheese (grated)
14. 5-6 leaves basil leaves (finely chopped)
15. Salt (according to taste)
16. Pepper (according to taste)
• Method:
1. On a heated pan, sauté the finely chopped onion in olive oil and grate the garlic over the heated pan.
2. Add the vegetable stock, chili flakes, capers, cherry tomatoes and the lemon zest.
3. Season the raw shrimp with salt and pepper and poach in olive oil till its pink and crisp.
4. Add the shrimp to the onion and garlic pan and mix well.
5. Strain the pasta and add it directly to the scampi and mix in with the butter.
6. Season it with salt, pepper and lemon juice and coat evenly.
7. Lastly, sprinkle in the grated cheese and the basil leaves, serve hot and enjoy!
