Blueberry Jam Easy Bake Muffins

• Introduction:

A basic blueberry muffin recipe that's quick and easy to prepare and perfect for any occasion. There's just something about blueberry muffins that trumps all other muffins the moistness of the cake which is perfectly accompanied with the blueberry jam.


Serves-12


• Ingredients:

1. 1 egg

2. ¼ cup cooking oil (flavorless)

3. ½ cup milk

4. 1½ cups flour

5. ½ cup sugar (powdered)

6. 2 tsp baking powder

7. ½ tsp salt

8. ½ tsp vanilla extract

9. Blueberry Jam


• Method:

1. Preheat the oven for 15 minutes at 180°C.

2. Beat the egg until foamy in a small mixing bowl. Then, beat in the oil, sugar, milk and vanilla using a whisk.

3. In a separate bowl, sift together all dry ingredients: the flour, baking powder and salt.

4. Make a well in the center of this mixture and slowly add the wet ingredients to the dry ingredients and combine them well until the batter is moistened.

5. Take a muffin pan and grease it with unsalted butter/oil.

6. Using a ice cream scooper fill in the muffin pan with one scoop of the muffin batter which should fill ⅓ of the pan.

7. Once the muffin pan is filled, take the blueberry jam and add ½ teaspoon of the jam on top of every muffin and let it stay on the top of the batter.

8. Bake your muffins in the preheated oven for 15 to 18 minutes or until golden brown and muffins test done with a toothpick comes out clean. Loosen with a spatula, turn out and let them cool on a cooling rack.

Served best warm and fresh out of the oven!
