Chocolate Doughnuts




Introduction:

Sweet, delicious, and can be eaten on the go.

Doughnuts are cakes with a long European history and roots in the earlier Middle Eastern cuisine. These are small ring or ball shaped sweetened dough, that is yeast leavened. The dough is mixed and shaped, dropped into hot oil and fried, and then glazed and filled with a variety of toppings.


Makes- 8 Doughnuts


Ingredients:

• Doughnuts:

1. 2¼ cup all purpose flour

2. 1½ tsp active dry yeast

3. ¼ tsp salt

4. 40g unsalted butter (softened)

5. 35g powdered sugar

6. ½ cup milk (lukewarm)

7. 1 egg (beaten)

8. Vegatable oil (for frying)

• Glaze:

1. ¾ cup icing sugar

2. 2½ tbsp cocoa powder

3. 1½ tsp vanilla extract

4. 4 tbsp milk

• Filling:

1. 3 tbsp Whipped Cream


Method:

• Doughnuts:

1. In a large bowl mix together- flour, dry yeast and the softened butter.

2. Mix all the ingredients together till they have course crumbs, and then mix in the sugar and salt.

3. Make a well in the centre on the flour mixture and add in the lukewarm milk and beaten egg, combine all the ingredients together until you have a ball of dough.

4. Shift the dough from the bowl to a flat surface sprinkled with flour, knead the dough until it is no longer sticky (5-7 minutes).

5. Cover the bowl with plastic wrap for 1½-3 hours until the dough doubles in size.

6. Then place the dough on a lightly floured surface and roll the dough in a ½ inch thickness with a rolling pin. Cut the dough with a (6-7cm) circular pastry cutter and make a hole in the centre using a smaller pastry cutter (Don't cut a centre in all the doughnuts, as a few will be filled with cream).

7. Place the doughnuts on a parchment paper and cover them for 30-60 minutes. Once they are again doubled in size, fry the doughnuts in medium heated vegatable oil, fry each side until golden brown.

• Glaze:

1. Sieve the icing sugar and the cocoa powder together in a bowl.

2. Add in the vanilla extract and milk and mix till all the ingredients are combined well.

3. Cool the glaze for 30-45 minutes, till it thickens.

• Filling:

1. Add the whipped cream in a bowl, using a hand/stand mixer mix the whipped cream till stiff peaks are formed.

2. Add the whipped cream to a piping bag with a round tip, and chill for 15-20 minutes.

• Preparation:

1. Take the ball doughnuts and insert the piping bag through by making a hole on one side and fill the doughnut with the cream.

2. Dip the top of the doughnuts in the chocolate glaze.

3. Let it chill and Enjoy!
