Introduction:
Some classic chunky and soft Vanilla cookies with a twist of cinnamon. These can be made with the most basic ingredients found at home.
Ingredients:
1⅓ cup all purpose flour
1 cup powdered sugar
1 tsp vanilla essence
1 egg
½ tsp baking soda
1 tsp cream of tartar
*Instead of cream of tartar you can also use 2 tsp of lemon juice*
1 cup unsalted butter(softened)
¼ tsp of salt
1½ tsp of cinnamon
Method:
Preheat the oven on 180°C for 10 minutes.
In a bowl, cream the butter, add in the egg, sugar and the vanilla.
In another bowl mix the flour, baking soda, cream the tartar and the salt.
Sieve the dry ingredients into the wet ingredients in 3 portions.
*Do not over beat the mixture it should have a loose dough like texture*
Add the cinnamon to the dough and mix it thoroughly.
Line a baking tray with the butter paper and spray/brush it with unsalted Butter or oil.
Now, with the help of an ice cream scooper, scoop the dough and put it on the tray.
*Make sure there is equal spacing between the cookies*
Put the tray in the oven on 180°C for 12-15 minutes, until light golden in color.
Take it out of the oven and let it cool for a few minutes, and Enjoy!
Tip:
Mix the lemon juice with the wet ingredients if you do not have cream of tartar.
